Best ever lentil burgers

Ingredients
- 2 tbsps Avocado Oil
- 1 White Onion (diced)
- 1-1/2 cups Mushrooms (sliced)
- 4 cloves Garlic (minced)
- 1 can Lentils
- 3/4 cup Instant Oats
- 1/2 cup All Natural Peanut Butter
- 2 tbsps Miso Paste
- 2 tbsps Low Sodium Soy Sauce
- 2 tbsps Thyme
- 1/4 cup Chia Seeds
- 1 medium Sweet Potato (grated)
Directions
- Start by cutting up all the vegetables and measuring out all ingredients
- Preheat oven to 375F
- Splash the oil into your skillet over medium-high heat. Toss in the onion, mushrooms, and garlic and sauté until they become brown and flavourful, about 10 minutes.
- Transfer the mixture to your food processor. Add all the remaining ingredients except the grated sweet potato. Puree the mixture until everything is smoothly combined. Transfer the mixture to a mixing bowl and stir in the sweet potato by hand. Let the mixture sit for ten minutes, giving the chia seeds time to work their magic.
- Using your hands, evenly shape the mixture into either 6 large patties or 12 thinner patties. The larger the patties the longer they will take to bake but will have a more desirable texture inside. Start by baking for 15 minutes, flip them, then bake an additional 15 minutes. They should be nicely browned on both sides.
- Serve in a lettuce wrap or over a salad. Enjoy!
