Cinnamon Steel Cut Oatmeal

Ingredients

  • 1 cup Steel Cut Oats
  • 1 pinch Salt
  • 2 cups Water
  • 1 tbsp Cinnamon
  • 2 tbsps Ground Flax Seed
  • 2 tbsps Chia Seeds
  • 2 tsps Vanilla Extract (optional)
  • 4 Pitted Dates (chopped)
  • 1/4 cup Walnuts (optional)
  • 1 banana
  • 1 cup blueberries
  • 2 cups Unsweetened Plant-Based Milk Of Choice, for serving

Directions

  1. In a medium-sized pot, bring the water to a boil. Add a pinch of salt, and the steel-cut oats and reduce heat to low.
  2. Simmer on low, uncovered, for 20-25 minutes, stirring every 5 mins or so (or per instructions). If you have soaked the oats overnight, cook for approximately 5 minutes, until they are creamy
  3. Stir in the ground flax, hemp, and chia seeds. Stir in the chopped dates.
  4. When the oats are creamy and tender, remove from heat and stir in cinnamon to taste and pure vanilla extract.
  5. Top with walnuts, fruit and plant-based milk. Enjoy!

Tips

Add Fruit: Keep it exciting and try new combinations. Add sliced banana/strawberries, blueberry/raspberry, mango/coconut, apple/cardamom.

Creamy texture: cook your oats in plant-based milk instead of water.

Save Time: soak the oats overnight to cut down on cooking time (to 10 minutes) and improve digestibility. Place oats in a bowl or pot, fill water to cover and cover with lid or cloth and soak overnight at room temperature. Rinse oats in the morning and cook.

Batch Cook: Allow to cool before transferring to air tight containers, top with walnuts and refrigerate. In the morning, add a splash of milk of choice and reheat in the microwave or on the stove-top.
