Carrots with Curried Chickpea Dip

Description
Ingredients
- 1 can chickpeas (drained and rinsed)
- 1 tbsp curry powder
- 2 tsp cumin
- ½ tsp salt & pepper (to taste)
- 2 Tbsp apple cider vinegar
- 1 stalk celery (finely chopped)
- ½ red bell pepper (optional)
- 2 cloves garlic (chopped)
- 2-3 large carrots, peeled and cut into sticks or rounds
Directions
- Drain and rinse chickpeas and add to a medium bowl. Mash chickpeas with a potato masher until about ¾ have been mashed.
- Add all remaining ingredients, mash or stir to combine. Taste and adjust seasonings.
- Serve with carrot sticks.
Tips
- Variations: this is great with cucumber, bell pepper, snap peas or with a seed cracker topped with tomato.
