Carrots with Curried Chickpea Dip

Description

Ingredients

  • 1 can chickpeas (drained and rinsed)
  • 1 tbsp curry powder
  • 2 tsp cumin
  • ½ tsp salt & pepper (to taste)
  • 2 Tbsp apple cider vinegar
  • 1 stalk celery (finely chopped)
  • ½ red bell pepper (optional)
  • 2 cloves garlic (chopped)
  • 2-3 large carrots, peeled and cut into sticks or rounds

Directions

  1. Drain and rinse chickpeas and add to a medium bowl. Mash chickpeas with a potato masher until about ¾ have been mashed.
  2. Add all remaining ingredients, mash or stir to combine. Taste and adjust seasonings.
  3. Serve with carrot sticks.

Tips

  • Variations: this is great with cucumber, bell pepper, snap peas or with a seed cracker topped with tomato.
