

Crunchy chili lime chickpeas

Description
Ingredients
- 2 can chickpeas (drained & dried)
- 1 tbsp Extra Virgin Olive Oil
- 1 1/2 tsps Chili Powder (more to taste)
- 1 tbsp Lime (PLUS zest)
- 3/4 tsp Sea Salt
- 1/4 tsp Black Pepper
- 2 tsps Cumin (OPTIONAL)
Directions
- Drain and rinse canned chickpeas. Lay in a single layer on a paper towel, allow to sit for 1-2 hours or until completely dry.
- Preheat your oven to 400°. Line a baking sheet with aluminum foil.
- In a large mixing bowl, mix oil, spices, lime & zest. Add chickpeas and toss well to combine.
- Pour chickpeas onto a baking sheet and spread out into an even layer. Bake at 400° for 30-40 minutes, or until crispy.
Tips
- These taste great on their own as a quick snack on the go or can be used as a topping for salads
