Easy Peasy Falafel

Description
Ingredients
- 1 can Chickpeas (drained)
- 3 Garlic (minced)
- 1/2 cup Red Onion (minced)
- 1/2 cup Parsley (packed, chopped)
- 1/4 cup Ground Flax Seed
- 1/4 cup Bread Crumbs
- 1/2 tsp Ground Cumin
- 1/4 tsp Red Pepper Flakes
- 1/2 tsp Salt
- 3 tbps Lemon Juice
Directions
- Start by mashing chickpeas with a fork or potato masher in a large bowl. Use a food processor if you have one, just be sure not to over-process the chickpeas into a paste!
- Mix in the rest of the ingredients
- Heat a large pan (or 2 if making a large batch) over medium high heat. Shape the mixture into patties, about 1/4 cup each and really pack the dough in tightly so it holds together.
- In a large pan, cook over medium high heat for about 5 minutes on each side, until golden.
- The falafel can be served over a bed of lettuce and tastes great with tahini (optional). One serving is equal to 3 falafels.
Tips
- If using a food processor, throw all the ingredients in together leaving ¼ of the chickpeas aside to add later for additional texture. Do not over-process, you do not want a paste!
