Simple Greek Salad

Description
Ingredients
- 1 1/2 cups Cherry Tomatoes (halved)
- ½ Cucumber (cut into wedges)
- 2 tbsps Red Onion (cut into slices)
- 1/2 cup Pitted Kalamata Olives
- ½ Lemon (juiced)
- 1 tbsp Greek Seasoning
- 1 1/2 tbsps Balsamic Vinegar
- Sea Salt & Black Pepper (to taste)
- 1 sprig rosemary for garnish
- Optional ingredients: ½ Avocado (sliced), ½ block tofu (cubed) to replace feta cheese
Directions
- Combine the Greek seasoning and lemon juice, in a shallow bowl.
- Assemble the salad by combining the cherry tomatoes, cucumbers, red onion, olives, balsamic vinegar, lemon juice, Greek seasoning salt, and pepper. Add the avocado and tofu as well if using. Mix well.
- Portion into bowls and garnish with fresh rosemary. Enjoy!
Tips
- If you do not have a Greek seasoning blend you can substitute for Italian seasoning
