

Vanilla Chia Seed pudding

Ingredients
- 1/2 cup Chia Seeds
- 1 1/2 cups Unsweetened Vanilla Almond Milk
- 1 tsp Pure Vanilla Extract
- 1/2 tsp Ground Cinnamon
- ½ cup strawberries
- 1 cup Blueberries
- 1/4 cup Unsalted Cashews
Directions
- Combine chia seeds, almond milk, cinnamon, and vanilla extract in a mason jar. Shake. Let sit for 10 minutes, then shake again to break up any clumping.
- Chill for 2 hours or overnight. If eating right away, blend chia, milk and vanilla in a blender.
- When ready to eat, shake again. Top with fruit and nuts.
Tips
Serving Size: this makes a good amount of chia seed pudding. It serves 2-4 servings depending on your hunger. As always, be mindful of your fullness cues to guide your portions.
Variations: this is delicious with mango and coconut pieces, nectarines and cherries or cinnamon pears.
